Located on the River Barrow estuary east of Waterford city, Dunbrody Country House sits in an expansive estate of gardens and woodland, accessed by a long, winding drive. This Georgian manor house hotel has just 22 rooms, each individually styled with high quality furnishings and decor, including patterned feature wallpaper, antique furniture and retro radios.
The hotel is owned by TV chef Kevin Dundon and his wife Catherine and is renowned for its fine dining. Dark wooden floors, deep red walls and French windows, which open onto the patio and garden, create an elegant and intimate atmosphere in the restaurant where guests can indulge in a five-course dinner or a gourmet tasting menu.
More casual fare is available in Dundon’s Champagne Seafood Bar and in The Local, a tiny pub in the grounds with slate floors, whitewashed walls and a wood-burning stove.
There are several intimate living rooms in which to relax, a cookery school offering one-, two- and five-day courses, and a stylish spa in the old stables. There are also numerous walking paths which lead through the woods surrounding the property.

This country manor has fantastic service from the moment you step through the door, the decor is beautiful and the food superb — the highlight of an all-round excellent experience of staying here.

Rooms
The 22 rooms are each individually decorated to a high standard yet in keeping with the Georgian heritage of the property. Standard rooms are spacious but overlook either the chickens or the car park, while Superior rooms and above have views across the gardens. Throughout, you’ll find light carpets, feature wallpaper and antique furnishings. Each room has a small table and chairs, complimentary water, a Nespresso machine as well as tea making facilities, and a retro radio. The white marble bathrooms vary in size but most Deluxe rooms and all Suites have a separate bath and shower.
Location
Situated in the southeast of Ireland on the River Barrow estuary, Dunbrody Country House is close to the ocean as well as a wealth of nearby historic sites. The hotel has the benefit of being a countryside retreat yet within relatively close proximity of both Waterford and Kilkenny.
Food and drink
Dinner at Dunbrody is a highlight and consists of either a five-course gourmet meal or an eight-course tasting menu. Alternatively, the bar offers a more casual seafood-based menu. Also within the grounds is The Local, a small, characterful stone pub with slab floors and a crackling wood-burning stove, which serves pub classics and craft beer brewed on site.
Facilities and activities
A fully-equipped cookery school in an outbuilding in the grounds offers courses designed by TV chef Kevin Dundon. Next door, in the tastefully-refurbished old stables, is the hotel spa. There are numerous walking trails which take you through the surrounding woodland, offering excellent views through the trees and across the water toward Waterford.
