I first visited Japan in 2017 during a day off when working as a flight attendant. I had some unexpected time off, during which a friend and I had been discussing authentic ramen spots in our area. My natural response was, ‘why not go to the source?’ Roughly 24 hours later, we found ourselves sitting at the counter of a small ramen shop nestled in a Japanese backstreet. That is how I’ve always sought to live my life — for the moment. Travel has been the best expression of this desire that I’ve found in my lifetime.

I’m an Italian native, that loves cooking Asian-style food. Korean food has always been my favorite to prepare. Couple that with most of my family living abroad, and you've got a person who feels no hesitation about traveling. Working with Audley has allowed my love for Japan and South Korea to continue growing.

Duck stew in Kanazawa, Japan

What’s the best local dish you’ve tasted?

Traditional duck stew is a dish I tried in Kanazawa, Japan, where it is a delicacy. I attended a cooking class (an experience Audley offers) where I not only learned to make this dish, but also was taught about its significance to the people of Kanazawa. Its flavor profile was out of this world, and it was easily the culinary highlight of my trip to Japan.

What’s your most vivid travel moment?

Stumbling upon the Taiwanese Temple Festival. I was in Taiwan for my birthday while working as a flight attendant, and I wanted to find a well-known attraction in Taiwan, the Golden Waterfall. Instead, I found this Temple Festival and was struck by the culture on display. The way the Taiwanese brought their deities to life will stay with me forever.

Where would you love to travel next?

A hidden passion of mine is history, and the history buff in me has long wanted to venture to Scotland. Ancient castles, cathedrals, and forts dot the Scottish landscape and I yearn to see them for myself. The scenery and climate also differ greatly from my last trips, which draws me in further.
